This combo is basically dessert for breakfast but is made out of vegetables- MIND BLOWN!
Ingredients:
1 cup frozen cauliflower rice
1/2 old fashioned oats
1 cup unsweetened vanilla almond milk
2 dates
1/2 an apple
Toppings of choice: Cinnamon, sugar free maple syrup, almond butter, and a dollop of whipped cream if you’re feeling frisky
Recipe (Serves 1):
Heat almond milk to a boil on the stove then add in oats and cauliflower rice and cook until desired oatmeal texture is reached around 5-7 minutes.
Then, add in any toppings while the oatmeal cooks like almond butter, maple syrup, dates, sweetener of choice.
While the oatmeal cooks, sautee the apple with cinnamon and a dash of maple syrup in a pan and cook apple until tender and caramelized, about 7 minutes.
Finally, assemble oatmeal bowl with the oatmeal as the base and place apple along with any other toppings to make the perfect hearty breakfast that makes for great fuel on your run. Ain’t nobody trying to gain the Quarantine-15 in this house!! Who knew vegetables could taste so good??
